As a mom to a picky toddler and husband (yes, even food writers have picky kids), the quest for a weeknight dinner that my whole family will eat is a job in itself. I usually lean towards dishes that have components I know they’ll both enjoy, from sweet bell peppers to a healthy serving of hummus, with optional “adult” upgrades so I don’t feel like I’m stuck eating at the kids’ table.
With that in mind, I see recipes as guides, where I can modify as needed so that everyone is satisfied. In reality, half the dinner will be thrown on the floor, where my dog is patiently waiting for scraps. I’ll end up eating leftovers for lunch the next day, and will somehow make my son pancakes for the 100th day in a row. But at least we all sat down for dinner together!
