While I try to make homemade meals for dinner most of the week, sometimes I am too swamped. Between writing projects and picking my son up from tennis and diving, I don’t always have time to cook from scratch.
Though I have several quick go-to meals for this frequent occasion, I sometimes find a new trick to add to my bag at ALDI, and I recently discovered a new here-today, gone-tomorrow special that’s perfect for a quick meal.

Why I Love ALDI’s Bremer Chicken Fajitas Skillet
I discovered Bremer Chicken Fajitas Skillet Meal while walking by the freezer coolers where specials are stored at my local ALDI. This meal in a bag costs only $6.49, and in addition to the meat, veggies, and sauce package, it contains six flour tortillas. There is also a beef fajita version for the same cost.
I grabbed it, thinking that I would make it one evening when I was on the run. Instead, my 15-year-old son found it Saturday morning (er, afternoon) when he got up. After having breakfast, he was still hungry, so I encouraged him to make something.

“Can I make this fajita skillet?” he asked me. I said he could, but I did ask him to follow the directions. According to the bag, it takes 14 minutes to prepare, but my son made it in less than 10 minutes. All he had to do was heat 1 tablespoon of oil in a pan, then add the chicken, veggies, and sauce package. While that was cooking, he warmed up the tortillas in the microwave for a minute or two.
My son made it according to directions, except he added a sprinkle of Trader Joe’s Salmon Seasoning. “This is pretty good,” he told me. “I give it at least an eight out of 10 points.”
That’s high praise coming from someone who usually says things are just “fine.” I thought they were mighty fine myself after snatching one tortilla to try. The peppers and onions melded well with the fajitas, and it tasted really good with a touch of guacamole.
I think if you add some guac and a side of beans or rice, you’ll have a complete meal that’s as good as the fajita dinners I’ve had at some Mexican restaurants.
That said, one package did not feed three people. It was basically one lunch for my son and a small snack for me. In the future, I’m buying two bags to make a quick dinner for my family, so my husband and I can also get some.
