Boursin Lemon & Dill Spreadable Cheese

In college, I worked for a cheesemaker on a small goat dairy in Western North Carolina. We made everything from gooey camembert-style cheese to aged raw milk cheddar, but fresh goat cheese (chèvre) was our best seller.
Every Friday afternoon, I prepped for the next morning’s farmers’ markets by cutting and wrapping cheese wedges and weighing chèvre into plastic tubs—oh so many of them—while listening to the local NPR station.
We sold many flavors of chèvre, but the most popular was a fig and rosemary number that was also the most annoying flavor to package. First, I had to weigh and smear a dollop of stiff fig preserves evenly across the bottom of the container. Then, I mixed unflavored chèvre with honey, rosemary, black pepper, and salt and layered it atop the preserves. The process left my hands and workspace sticky, which meant more cleaning (something you do constantly when you make cheese).
My subtle revenge against the popularity of this flavor was to recommend our garlic and dill chèvre to anyone at the market asking for a recommendation. I think I hoped that, over time, I might shift consumer opinion to a less cumbersome flavor to make, thereby saving myself many hours of work in the cheese kitchen.
Alas, that was not to be, but my fondness for garlic and dill chèvre was authentic, and I still gravitate towards similar cheeses even now (a.k.a. I hold a grudge against sweet soft cheeses—sorry!).

Why I Love Boursin’s Lemon & Dill Cheese
That’s why I jumped at the chance to try Boursin’s limited edition Lemon & Dill flavored cheese. It combines one of my favorite flavor profiles with one of my favorite mass-produced cheeses. Seasoned generously with lemon, dill, garlic, and dried cucumber, this cheese reminds me of everything I love about the classic Garlic & Fine Herbs Boursin, but with more tang from the lemon and the fresh, bright flavor of dill.
You can, and should, use Boursin for everything from a sandwich spread to a melty addition to pasta, but I’ve been enjoying it solo on stacks of Ritz crackers because the flavor stands on its own (and my 4 p.m. snack time needs to be as unfussy as possible).
That said, I look forward to keeping this cheese stocked all summer long because it’s tailor-made for summery salads, savory puff pastry tarts, and grilled vegetables. It promises to be the elegant finishing touch to the easy dishes I crave this time of year.
