- Why I Love It: These cookies swap the old-school vanilla cookies and chocolate filling with chocolate cookies and vanilla filling. The cookie has a rich cocoa flavor, and there’s just the right amount of not-too-sweet cream filling.
Kids these days may have iPads, Nintendo Switches, and any song or show they want on-demand at all times, but as a child of the ’80s and ’90s, I can definitively say we had WAY better snacks. Now that I am CEO of snack time at my house, I admit, I can be a bit of a bore. I cook a lot for work and tend to have meal-type snacks at the ready. Hummus and carrots, apples and peanut butter—boring but gets the job done.
However, this week, I might win Mom of the Year because I was lucky enough to get my hands on a pack of the brand-new Keebler E.L. Fudge Choco Vanilla Cookies.
Remember Ernie, the adorable little elf who baked up the Fudge Stripe cookies of our youth? He’s back with double the cookies, complete with vanilla-flavored cream inside. Plus, he’s recruited a new friend to his iconic Hollow Tree Bakeshop team, Joy. Each sandwich cookie is shaped like an elf on the baking team, and includes an adorable stamped message like “Made with Magic” and “Everyone Loves Fudge.”

Why These Cookies Are So Delicious
The cookie base is thin with a rich cocoa flavor and a texture somewhere between shortbread and classic sandwich cookies. There is just the right amount of cream—not so much that the cookie shatters when you bite into it, but enough to get a taste in each bite. I loved that the cookie base was not too sweet, allowing the cream to shine.
These cookies are highly snackable and very dunkable. We all sat down together, and I showed my eight and four-year-olds how to snack like a child of the ’90s, complete with a cold glass of milk. It’s hard to say who enjoyed the cookies more, me or the kids, but I can tell you that the pack didn’t last the school week!

My kids got a kick out of looking at all of the different elves and reading what they had to say. Plus, a QR code on the front of the package allows you to enter the “Open for Magic” digital platform where you can interact with the elves and even scan the cookies themselves to learn more about each baker.
