The $3 ALDI Frozen Find That Makes Weeknight Dinners So Much Easier



When I grocery shop, I’m always on the lookout for shortcuts that help me get a great meal on the table in under 30 minutes. I recently discovered a fantastic meal completer at ALDI: Ready to Roast Mediterranean Vegetables.

Why I Love ALDI’s Ready to Roast Mediterranean Vegetables

For just $2.99, you get a full pound of seasoned mixed vegetables—zucchini, red onion, red peppers, and tomatoes—all lightly seasoned with garlic and onion powder and a hint of cardamom. The first time I tried them, I microwaved them for a few minutes. The second time, I tossed the bag into my air fryer, which was the perfect way to cook them.

Although the bag recommends roasting them in the oven, I’ve found they’re even better in the air fryer. The veggies come out perfectly tender, flavorful, and lightly crisped.

When you open the bag, the smell of garlic hits you immediately, which, if you’re a garlic lover like me, is definitely a plus. One 16-ounce bag yields about four servings, and after roasting, they taste almost like candy—sweet, savory, and seriously delicious.

If you’re short on time—like I was that first time—you can still microwave them. They’ll still taste good, though the texture is a bit soft compared to roasting.

I roasted them in the air fryer for 10 to 15 minutes at 350°F. You can also roast them in the oven at 400˚F for 20 minutes or sauté them with a tablespoon of olive oil.

They complement proteins like chicken, pork, or steak, a fantastic, savory side dish to any meal. They’re perfect for rounding out a dinner when you need a veggie. 

You can chop them up and add them to pasta or omelets. They would also be great in hash browns or breakfast casseroles. Additionally, they make an excellent veggie filling for tacos, quesadillas, or even fried rice dishes.

Although they’re a specialty item at ALDI right now, I hope they’re added as a permanent item in the frozen aisle. They’re so good and so convenient.
