The New Costco Deli Item I’m Buying All Summer Long

When it comes to summer hosting, Costco is one of my favorite places to shop. It has the best deals on everything you need for cookouts and picnics. 

The Kirkland Signature Beef Hot Dogs and Kirkland Signature Angus Ground Chuck Beef Patties are two perennial favorites in our household. As summer kicks off, I also stock up on foil sheets and paper plates. 

When I pop into Costco before hosting friends or before a long weekend, I love to check out the deli for ready-to-eat sides. The shrimp cocktail and ready-to-bake mac and cheese have been fan favorites at previous parties. 

Imagine my delight when I saw Costco’s new Loaded Potato Salad in the deli section before Memorial Day weekend. I swooped up some to try, knowing we’d have friends over during the first big grilling weekend. Here’s why I’m going back for more of Costco’s newest summer side dish. 

Why I Love Costco’s New Loaded Potato Salad

Made with a combination of russets and red potatoes, Costco’s Loaded Potato Salad is made with a dressing of mayo and sour cream and topped with shredded cheddar cheese and bacon crumbles. The ingredient label also includes green onions, but the addition of these is so light you might not even notice. 

This ready-to-eat potato salad is sold in 2.5-pound containers in the deli section for $3.99 per pound, or about $10 a container. The container easily feeds 10 to 12 people with other sides. 

This potato salad is rich and creamy, with a smoky flavor thanks to the bacon. While it is delicious straight out of the container, you can gently heat it (one to two minutes in the microwave) for a creamier, warm-style potato side. 

If you serve it in a nice bowl, you can easily pass it off as homemade. Top it with sliced green onions to dress it up. 

According to Reddit, this Loaded Potato Salad has been spotted at Costco locations worldwide, but there is no word yet on how long this seasonal side dish will be in stores, so don’t wait to try this new deli item from Costco.
